Hi, Doral Yard community! Like you, I’m anxiously awaiting the day we can meet in person and cook up delicious and nutritious recipes together at The Doral Yard. Until then, I’m thrilled to have the opportunity to share tips, tricks, and recipes that nurture and nourish you and your family.

Adjusting to quarantined life is no walk in the park (pun intended!). Now more than ever, it’s our duty to stay healthy and eat nutrient-rich food that will support our bodies and immune system. That said, there’s no reason why that nourishment can’t come from sweet cakes or breads, especially when you choose the right ingredients. 

My hope is to bring a little sweetness to your life by sharing one of my family’s favorite recipes that my kids and I love to bake together, Healthy Chocolate Bread. Check out our baking sesh in action here!

Surprisingly, one of the key ingredients in this delicious recipe is coconut. Coconut oil may have antibacterial properties and can possibly reduce candida, fight bacteria, and create a difficult environment for viruses.

Did you know that almost half of the fat in coconut is made up of lauric acid? Lauric acid helps destroy active bacteria in the stomach and mouth. It’s also found in breast milk and as many of you may already know, research shows breast milk helps immunize babies against a variety of infections. The lauric acid found in coconuts may similarly protect you and your kids.

Healthy Chocolate Bread Recipe

Ingredients

  • 2 teaspoons coconut oil
  • 1 cup whole wheat flour
  • 1 cup almond flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup coconut sugar
  • 1/2 cup coconut milk
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup dark chocolate chips + a small handful more for decorating

Preparation

  • Preheat oven to 350 degrees.
  • Grease an 8 x 4 baking dish with coconut oil.
  • In a large bowl, mix all dry ingredients together until combined (flours, salt and baking powder).
  • In a separate bowl, mix all wet ingredients together (eggs, sugar, milk and vanilla extract ).
  • Add wet ingredients to the bowl with dry ingredient mixture and mix until well combined.
  • Add 1/2 cup of chocolate chips to batter and mix lightly to combine.
  • Pour batter into baking dish and sprinkle extra chocolate chips over the top.
  • Bake for 45 minutes.
  • Allow to cool, slice and enjoy!
